About Helen
Melusine is the creation of Helen Lawrence, former owner of the renowned Demuths Cookery School in Bath, who for 10 years taught people from all over the world how to cook delicious, creative plant-based food. Helen is the brains behind the very well-known and well respected Demuths Vegan Diploma, the first course of its kind – a fully comprehensive, immersive course focused on vegan cooking.
Vegetarian since childhood, Helen trained in classical French cooking and is now an expert in plant-based cooking. She loves the creativity and artistic side of cooking, lifting vegetables to the central position they deserve in our diets.
Helen has always been interested in how what we eat is so closely related to our wellbeing.
After spending much of her childhood in France, Helen is delighted to be moving into a purpose-built space in beautiful surroundings - the perfect opportunity to combine her passion for food with wellness.

Melusine inspires creative and nourishing ways of working with food, in stunning surroundings, making the most of the fantastic fresh, locally sourced produce. For anyone who knows Helen from Demuths Cookery School, you can expect more delicious food, the same great standard of teaching delivered with the patience and passion that Helen is so well known for.
LOCATION
Melusine is based in the small hamlet of Le Somail, Saint-Nazaire-d'Aude situated between Narbonne and Carcassonne, in the Occitanie region of southern France on the famous and picturesque Canal du Midi.
Melusine is located in La Bergerie Antoine, a 5-star luxury, fully renovated country home comprising of 5 beautiful double (or twin) en-suite bedrooms.
There is an open plan kitchen space for our cookery sessions and a courtyard and sun terrace where we can gather to share the food we have prepared. There is also a large swimming pool, of which our guests have exclusive use.
