Ingredients:
2 kilos damsons
200mls water sugar
Method:
Put the damsons and water into a large pan and simmer gently until completely broken up.
Push through a colander and weigh the pulp. For every 400g of pulp add 350g caster sugar and return to the pan.
Cook until very thick and a line is drawn when a spoon is drawn through the pan. Pour into a container to set.
