CAPER TARTARE

Caper Tartare

Dietary: Gluten Free, Vegan Option

Makes: approx 100ml

Ingredients:

  • 2 tbsp Capers (and a few caper berries if you can get them)

  • 20g Cornichons or gherkins

  • 1 garlic clove, finely crushed

  • 2 Spring onions, finely sliced

  • 4 tbsp Crème fraiche

  • 2 tsp Extra Virgin Olive Oil

  • 2 tsp Lemon juice

  • Salt and pepper

  • A handful of fresh chives, parsley or dill

Method:

  1. Crush the garlic on your board and crush into a paste with a little salt to help it grind.

  2. Add the capers, spring onions, cornichons and herbs and chop them finely, or whizz in a food processor.

  3. Add olive oil, crème fraiche, salt and pepper and lemon all to taste. If the tartare is too strong you can add more crème fraiche.
